High-temperature cooking methods for meat (e.g., grilling, barbecuing, pan-frying) produce mutagens that induce mammary tumors in animals. In the prospective NIH-AARP Diet and Health Study, researchers examined whether these preparation methods are associated with incidence of breast cancer in women. Researchers analyzed data from 120,755 postmenopausal women who completed general food-frequency questionnaires at baseline, along with detailed, validated meat-preparation questionnaires (types of meat, preparation methods, level of doneness on inside and outside) within 6 months.
