Foodborne illness is often caused by ingestion of foods contaminated with Shiga toxin–producing Escherichia coli (STEC). Dairy products and undercooked meat lead the list of STEC sources, and these infections can cause kidney disease and hemolytic uremic syndrome (HUS) associated with severe morbidity and death, especially in children and immunocompromised adults.
In August of 2022, the Tennessee Health Department identified two cases of STEC infection in infants, one of whom developed HUS resulting in a 27-day hospitalization.
