Eosinophilic esophagitis (EoE; severe eosinophilic infiltrate of the esophageal epithelium that does not respond to acid-suppressive therapies) is one of the most-discussed esophageal diseases among both adult and pediatric gastroenterologists. Treatments include systemic or topical steroids, leukotriene inhibitors, and elemental or elimination diets. Although the dietary approach appeals to physicians and patients, patients often cannot correlate their symptoms with ingestion of specific foods, which suggests that EoE likely is a mixed or delayed hypersensitivity response.
