In the New Yorker, Atul Gawande delves into the kitchen of the Cheesecake Factory, a higher-end chain restaurant, to find out what lessons can be learned in terms of standardization and efficiency in the growing number of hospital chains.
He concludes: "We've let health-care systems provide us with the equivalent of greasy-spoon fare at four-star prices, and the results have been ruinous. The Cheesecake Factory model represents our best prospect for change."
