Eosinophilic esophagitis (EoE) is an inflammatory disorder that is characterized by severe, isolated eosinophilic infiltration of the esophagus; it is associated with a variety of clinical findings, including dysphagia, food impaction, vomiting, chest pain, and weight loss (Journal Watch Gastroenterology Mar 28 2006). Although its causes are unknown, EoE has been linked to food hypersensitivity, particularly among children. In fact, the primary approach for treating pediatric EoE is elimination diets, which typically exclude cow’s milk, soy, wheat, eggs, peanuts, and seafood (Journal Watch Gastroenterology Jan 5 2007).
